Tzatziki

• ½ English cucumber (1 ½ c.), seeded and diced
• 1 c. yogurt, (thicker Greek-style preferable)
• 2 T red onion, diced
• ½ t. finely chopped garlic
• 1 T. + 1 t. lemon juice
• 1 t. sugar
• 1 T. lemon zest
• ¼ t. ground cumin, toasted
• ½ t. ground coriander, toasted
• ¼ t. paprika
• Pinch cayenne pepper
• 1 T. chopped mint
• 1 T. chopped parsley
• 1 t. chopped thyme (or oregano)
• Salt and pepper to taste

Combine all the ingredients in a bowl and season to taste. Balance the flavors by adding more lemon juice or sugar as needed.
