Lemon Tart in a Corncake Crust

Our Crispy Corncakes with a hint of anise pair fabulously with citrus. I couldn’t wait for the summer berries to kick in to try this recipe but I’m sure adding sweet local berries as a topping will only make this dessert beyond delicious. I do think this could be the easiest lemon tart I have ever made. I used a rectangular tart pan but this will work in a standard 9 inch round tart pan as well.
